I had some guests for dinner last night and I served fried whiting that I had gotten for a good price at the grocery store. I simply make sure they have no scales but the skin is on and dust it with some salted flour and fry in hot oil.
No recipe needed.
My friends thought I did something special and loved how moist and delicious the fish was. The best part is that even though it is fried in oil, the fish does not really absorb any oil because there's no batter, only a light dusting of flour.
